I went home and immediately started the SCD diet that I started 3 years ago. All the arthritis pain eventually led me to a physical therapist who referred me to a nutrition therapist who put me on the WELL And Psychology Syndrome (GAPS) diet, which is very similar to sickle cell disease. As I was familiar with SCD, I had already memorized the illegal list, so this part was easy. GAPS is very structured and guides you step by step through the process to limit dietary errors. I lost a frightening amount of weight, but it eventually stopped. My gut was in very bad shape when I started, and it took a long time for it to heal (2 years), but it did. It was a miracle. I never want to be so sick again, so it`s “easy” for me to stay on this rigid diet.
Since GAPS and SCD are so similar, I think all recipes are interchangeable. I was torchless for 4.5 YEARS! Then during a great kitchen conversion (!) I started taking Advil every day for a few weeks, and maybe a little too much wine at the end of the day. A carefree attitude because I`ve been doing so well for so long, and BAM! A torch. But it only took 1.5 months to get back on track with the GAPS/SCD protocol. One thing I transfer from GAPS is that my breakfast is almost always a soup made from bone broth. It`s a fantastic way to start the day. For a change, I have the usual egg dishes and for a pancake treat with almond flour, which I also have for snacks. I tried the different “breads”, but they make too much effort and frnakly, it`s not worth pretending as if.
Having “bread”. Crackers, on the other hand, are essential to have something crispy! Eating out is difficult, so I usually call ahead to ask if the chef can make accommodations. They almost never cook enough broccoli, asparagus, green beans, carrots, so I send them back. My husband supports me, which is essential. Other family members were slow to accept everything. It`s a way of life, so instead of thinking about all the wonderful foods I can`t eat, I think about all the fabulous foods I CAN eat. I now have a large collection of cookbooks and recipes from websites like comfybelly.com that are favorites. And with this lifestyle, I don`t need to carry extra underwear and washcloths or look for the nearest bathroom wherever I go. In fact, I feel a bit normal! If you can afford a good nutrition therapist, get his help, it`s worth it. Otherwise, walk slowly. If you have problems with certain foods, don`t worry.
